LBB Specialties partners with Ruby Bio to commercialize fermented emulsifier platform

LBB Specialties and Ruby Bio have entered a partnership to commercialize Ruby Bio’s fermentation‑derived emulsifier platform across North America. The collaboration will support production of the emulsifiers in the United States later in 2026, with a self‑GRAS determination slated for 2027. Ruby Bio’s technology uses yeast to convert sugar or up‑cycled waste feedstocks into emulsifiers that can replace synthetic emulsifiers at half the dose, as demonstrated in a snack cake containing 0.5% RubyCore and 1% DATEM.
